Carrot balls with lemon and cardamom

Ingredients

  • 1 carrot, around 150g, finely grated
  • finely grated zest 1 lemon
  • 10 soft dates, pitted and roughly chopped
  • 100g rolled porridge oats
  • 31⁄2tbsp coconut oil
  • 2 pinches crushed cardamom seeds
  • ground cinnamon, for dusting (optional)

Method

Place all the ingredients in a mixing bowl and blend using a stick blender to a smooth consistency. Roll the mixture into walnut-sized balls and chill for at least 1 hour. Dust the balls with cinnamon, if you like.
