Makes 4 Cakes, Bread and Pastries
Preheat the oven to 200C/ 180C F/Gas 6 and line a large baking tray with baking paper.
Make the filling by combining the ground almonds, butter and sugar in a large bowl. Add the egg and almond extract and mix to form a paste.
Arrange the croissants on the prepared tray. Cut a hole in each croissant along the side to create an opening, then fill with 1tbsp almond paste. Spread the remaining paste on top and bake in the oven for 12-13 minutes until crisp and golden.
Sprinkle with flaked almonds and dust with icing sugar to serve.
