Figs with whipped feta

Ingredients

  • 125g feta
  • 75g Greek yoghurt
  • 4 slices rye or sunflower seed bread
  • 4 ripe figs, sliced
  • 2tbsp pomegranate seeds
  • 2tbsp pistachios, roughly chopped
  • 2tbsp runny honey

Method

Using an electric mixer, whisk the feta until smooth, add the Greek yoghurt and stir to combine.

Toast the bread, then spread each slice with the whipped feta. Top with the sliced figs and pomegranate seeds then finish with a scattering of pistachios and a drizzle of the honey.
