  • 200g caster sugar

For the islands

  • 4 large egg whites
  • 1⁄4 tsp sea salt
  • 75g icing sugar, sifted

For the crème anglaise

  • 500ml whole milk
  • 4 egg yolks
  • 1tbsp vanilla paste or 2 vanilla pods, seeds scraped out
  • 75g caster sugar
  • 2tbsp roasted flaked almonds
