Ingredients

  • 4 spring onions, sliced thinly on the diagonal
  • 1 small ripe mango, flesh removed and cut into small dice
  • 1 ripe avocado, flesh cut into small dice
  • 4 medium-sized green tomatoes
  • 1 long red chilli, deseeded and finely chopped
  • a small handful of mint leaves, roughly chopped
  • 2tbsp roasted cashews, roughly chopped
  • 2tbsp extra virgin olive oil
  • juice of 1 lemon

Method

Put the onions and avocado into a dish. Cut the tomatoes in half and remove the core, cut into small dice and add to the dish along with the rest of the ingredients. Stir well and leave for 30 minutes to 1 hour before serving.
