Grilled halloumi burgers with smashed avocado

For the seasoning

  • 1tsp sumac
  • pinch cayenne pepper
  • 1tsp paprika

For the smashed avocado

  • 2 very ripe avocados
  • juice 1 lime

For the burgers

  • 4 x halloumi cheese slices, around 2cm thick
  • olive oil, for drizzling
  • 4 brioche-style burger buns
  • handful mint leaves, chopped
  • pomegranate molasses, to drizzle
  • 2 ripe beef tomatoes, sliced
  • bunch rocket

Method

Get your grill going. Put all the seasoning spices in a bowl and mix well. Halve the avocados, remove the pits and, using a large spoon, pull the flesh away from the skin into a bowl. Using the back of a large spoon, smash the avocado to a chunky paste. Pour in the lime juice, give it a mix and set aside.

Lay the halloumi slices on a plate and drizzle olive oil on both sides. Lightly sprinkle the seasoning mix over the cheese.

Place the halloumi over direct heat and grill for 2 minutes on one side until you have some golden grill marks. Flip and repeat. Slice and toast your burger buns.

To assemble, spoon the avocado onto the bun bases. Sprinkle the mint onto the avocado, then place the halloumi slices on top. Next, drizzle the pomegranate molasses onto the halloumi. Top that with the tomato slices and rocket and serve.
