Makes 24 Cubes Drinks
Bring 700ml water slowly to the boil with the caster sugar, orange-flower water, cinnamon, cloves and orange peel. Stir until the sugar dissolves, then simmer for 5 minutes. Soften 7 sheets of gelatine in cold water for 5 minutes. Take the sugar syrup off the heat, add the gelatine, stir well and leave to cool. Halve 12-14 kumquats, put one half in each cubicle of two ice trays, strain over the sugar syrup and refrigerate for 2 hours. Put a measure of whisky into a heatproof glass, add boiling water and serve jelly cube on a spoon, ready to plop in. Stir to melt.
