Gently cook the spring onions, green chilli, grated ginger, cumin and turmeric in a small amount of melted butter. After 2-3 minutes stir in the tomatoes and 1tbsp coriander, add the eggs and scramble, stirring constantly. Spoon over toasted naan and scatter liberally with fresh coriander.
