Indian scrambled eggs over hot naan

Indian Scramble Over Hot Naan

Ingredients

  • 4 spring onions, sliced
  • 1 green chilli, deseeded and finely chopped
  • a little grated ginger
  • ½tsp ground cumin
  • ¼tsp turmeric
  • butter
  • 2 tomatoes, peeled and chopped
  • 1tbsp fresh coriander, plus extra for topping
  • 8 eggs, beaten
  • toasted naan

Method

Gently cook the spring onions, green chilli, grated ginger, cumin and turmeric in a small amount of melted butter. After 2-3 minutes stir in the tomatoes and 1tbsp coriander, add the eggs and scramble, stirring constantly. Spoon over toasted naan and scatter liberally with fresh coriander.
