  • 100g cured Spanish ham, finely chopped
  • 60g plain flour
  • 500ml whole milk, hot
  • 150g panko breadcrumbs
  • 30g manchego cheese, grated
  • 2 eggs, beaten
  • 1 litre olive oil, for frying
  • black pepper
