Juicy watermelon, strawberry and lemon pops

Makes 8-010 small pops Desserts and puddings

Ingredients

  • 300g strawberries, hulled and halved
  • 3tbsp icing sugar, sieved
  • 500g watermelon
  • freshly squeezed juice 1 lemon

You will need

  • 8-10 small popsicle moulds and sticks

Method

In a bowl, stir together the strawberries and sugar and leave for 1 hour for the strawberries to release their juices, stirring occasionally.

Cut away the watermelon rind, deseed and roughly dice the flesh. Place the strawberries and all the juices, with the watermelon and lemon juice in a blender and blend until smooth. Divide the mixture between the moulds.

Add the sticks in an upright position at this stage, or freeze first for a while until the mixture is firm enough to hold the sticks straight. Freeze for 4-6 hours until frozen.

When you are ready to serve, dip the moulds into hot water for a second or two, then gently pull out the popsicles.
