Lemon and herb salsa

Serves 4 Sauces and accompaniments

Ingredients

  • 6 preserved lemon slices
  • 2 spring onions, finely chopped
  • 1 garlic clove, finely grated
  • 1tsp pul biber
  • 10g coriander leaves, finely chopped
  • 10g parsley leaves, finely chopped
  • 3tbsp extra virgin olive oil
  • 2tbsp toasted pine nuts, roughly chopped

Method

Remove the slices of preserved lemon from their oil and drain on kitchen paper. Chop them finely and put in a bowl with the rest of the ingredients.
