Mint and cumin Lassis

Ingredients

  • 1tsp cumin seeds
  • 650g Greek yoghurt
  • about 2-3tbsp chopped mint leaves, plus extra leaves to serve
  • ½tsp freshly ground black pepper
  • finely grated zest of 1 lime and juice of ½
  • 1tbsp caster sugar
  • ice cubes

Method

Pour the cumin seeds into a small, dry frying pan and place over a medium heat. Stir until aromatic and a shade darker, then grind to a powder with a pestle and mortar.

Put the crushed cumin into a jug blender or smoothie maker and add the remaining ingredients with a big handful of ice cubes and about 1tsp salt, or to taste.

Blitz until the mixture is blended and smooth. Pour into chilled glasses and sprinkle with mint leaves to serve.
