Overnight blueberry and almond bowl

Ingredients

  • 60ml fresh lemon juice
  • 1¼tbsp maple syrup
  • 235ml fresh orange juice
  • 148g frozen blueberries
  • 140g unsalted organic almonds, peeled and finely chopped
  • 2tbsp chia seeds
  • Garnish of your choice

Method

The day before, put the lemon juice, 235ml water, maple syrup and orange juice in a blender. Add the frozen blueberries and chopped almonds, then blend for 30 seconds on full speed.

Transfer to a bowl and add the chia seeds, mixing with a whisk. Put in the fridge overnight. To serve, divide among 4 bowls and top with your choice of garnish.
