Roasted fig Lassis

Ingredients

  • 12 fresh figs, ideally Black Mission
  • juice of ½ lemon
  • 4tbsp runny honey
  • ½tsp ground cardamom
  • 2tsp sumac
  • 500g Greek yoghurt
  • 100ml whole milk
  • ice cubes

Method

Preheat the oven to 180ºC/350ºF/ Gas 4. Cut the figs into quarters and drizzle over the lemon juice and honey. Sprinkle over the cardamom and half the sumac. Roast in the oven for 10-15 minutes. Remove and allow to cool. Put the yoghurt, milk and cooled figs with their juices into a jug blender or smoothie maker with a few ice cubes. Blitz until smooth. Pour into chilled glasses and sprinkle with the remaining sumac to serve.
