Makes aroudn 100g Sauces and accompaniments

Ingredients

  • 100g butter
  • 10g red shiso leaves, finely chopped
  • 1⁄2tsp sea salt
  • 1 piece sushi ginger, finely chopped
  • 1tsp tamari (optional, but it makes it a lovely colour)

Method

Soften the butter, then either mix all the ingredients together by hand or whizz in a small food processor for a more homogeneous look. To store, simply pile onto a piece of cling film, shape into a log, roll up tightly, store in the freezer and cut slices as necessary.
