Strawberry and cardamom Lassis

Ingredients

  • 300g strawberries
  • 4-6tbsp caster sugar
  • 1tsp ground cardamom
  • ½tsp black peppercorns, crushed
  • 1½tsp rose water
  • 400g Greek yoghurt
  • ice cubes

Method

Hull and chop the strawberries. Add sugar to taste, the cardamom, pepper and rose water. Leave for 30 minutes for juices to release.

Purée the strawberries in a jug blender or smoothie maker. Remove a few spoonfuls and set aside. Add the yoghurt to the blender with a few ice cubes and blitz until smooth. Serve with the reserved strawberry purée on top.
