Sweet ’n’ salty mixed nuts

Makes 350 Sauces and accompaniments

Ingredients

  • 11⁄2tbsp sugar of your choice, such as granulated, brown or coconut sugar
  • 2tbsp tamari
  • 1tbsp olive oil
  • 1-2tsp dried rosemary
  • 350g mixed nuts (or seeds if you like)

Method

Preheat the oven to 170C/150C Fan/Gas 3. In a bowl, mix together the sugar, tamari, olive oil and rosemary. Put the nuts on a baking sheet and toast for 5 minutes in the oven. Tip the nuts into a bowl, pour over the olive oil mixture and stir until everything is thoroughly mixed. Return the nuts to the baking sheet, spread them out evenly and toast for a further 5-7 minutes, until golden.
