Tamarind fried prawns

Ingredients

  • 2tbsp tamarind pulp
  • 1tbsp light soy sauce
  • 1⁄2tsp soft brown sugar
  • 1⁄4tsp dried chilli, crushed
  • 1tsp freshly ground black pepper
  • 600g raw prawns, peeled and deveined, tails intact
  • 2tbsp vegetable oil, for cooking
  • coriander leaves, to garnish

Method

Mix the tamarind, soy sauce, sugar, chilli and pepper together in a bowl. Add the prawns, cover and leave in the refrigerator for 30 minutes, turning 2-3 times.

Season the prawns. Heat the vegetable oil in a frying pan over a medium to high heat and fry the prawns for about 2 minutes on each side until they are dark brown. Garnish with coriander leaves and serve as a starter with some cucumber slices.
