The secret to a good ramen is a good broth and this no-reservations Soho joint has it nailed. To get started, pull up a stool and order yuzu-based cocktails like Tokyo Mule or Gini Hendrix. Then order the tonkotsu for its tender chashu pork, practically neon egg yolks and pork bone broth that has been 20 hours in the making. For an extra kick, order the curry ramen made with fried chicken, Padrón peppers and cabbage. It’s no reservations, so come early to avoid the queues (worth the wait) or maybe head to their new Saturdays-only ramen bar further south in Bermondsey. LF.
