Within the grounds of The Grove hotel, an 18th-century mansion at Chandler’s Cross just three minutes from the M25, you’ll find a walled garden that’s home to an abundance of fruit and vegetables. This is the larder for Russell Bateman, head chef of the much-lauded Colette’s. Bateman has worked with the likes of Gordon Ramsay and Marcus Wareing and it shows – he’ll use his garden stash for dishes such as ‘Walled Garden’ asparagus, pheasant egg and truffle. Other plates of note include Brixham Bay crab, watercress jelly, dill, lemon mayonnaise, radish and spring onion. AH.
