The name is a salute to Manchester’s contribution to science, yet this industrial space feels surprisingly cosy thanks to honeycomb-coloured velvet upholstery. The eye for style extends to the kitchen, where head chef Stephen Moore plates edible artwork on stony ceramics and the bar team mix speciality gins with appropriate scientific precision. This New Year’s will only be Grafene’s second, but Moore has concocted a beautiful menu bookended by two glasses of Pommery champagne. Highlights include salmon with salt-baked beetroot and venison with pickled berries.
