Hamburg
Walking through the doors of this bright,
open-plan restaurant with splashes of
turquoise and trendy driftwood decor, you half
expect to hear the sound of the ocean waves
crashing behind you. In fact, we’re right in the
heart of Hamburg’s trendy Sternschanze
district. Jellyfish is a local institution and has
recently been awarded its first Michelin star– and rightly so. Chef Laurin Kux is known for
creating ambitious yet delicate plates using
fresh and sustainably sourced fish. The set
menu – diners can opt for between four and
eight courses – changes every other month
according to the season, but look out for the
pulpo (octopus) served with parsley roots,
onions, lovage and roe – it’s sure to convert
any sceptic. Another menu staple that will keep
you coming back for more is the sea bream,
lobster, seasonal roots and quince, or pre-
order the sharing ‘seafood etagere’ menu. This
comprises the finest ingredients the ocean has
to offer across six courses, so expect freshly
shucked oysters, Norway lobster and delicate
scallops (to name just a few).
