Alongside masterpieces by Titian and da Vinci in the revamped permanent collection of London’s National Gallery, another Italian maestro is making his mark: Locatelli. As part of the gallery’s bicentenary transformation, chef Giorgio Locatelli’s eponymous restaurant recently opened on the bright mezzanine of The Sainsbury Wing. His refined approach with seasonal ingredients is evident throughout. A cuttlefish salad, brightened with pea purée and chives, is light and precise. A fritto misto of courgette and aubergine arrives golden and crisp, conjuring the Ligurian coast more vividly than a postcard. And leave room for the chef’s take on pastas, including hand-folded braised veal tortelloni and tagliatelle with beef and pork ragù. In a gallery rethinking the Old Masters, Locatelli offers a culinary counterpart: fresh and contemporary.
