Local lad Andrew Green introduces a bit
of northern soul to popular British plates
in his restaurant at the Hotel Indigo, right
next door to Manchester’s Victoria station.
The menu offers a creative mélange of
classic dishes, served up in a funky
setting. Pick one of the intimate leather
booths, where the kitchen viewpoint
brings theatre to the experience, and start
with the excellent onion soup: a delicate
lamb broth, topped off with a Lancashire
cheese croute. Follow that up with the
star attraction – Lancashire beef, which
is aged for 28 days in a Himalayan salt
chamber.
