On the fourth floor of the world’s tallest hotel, the JW Marriott Marquis in Dubai’s busy Business Bay area, Michelin-starred chef, Atul Kochhar is raising the culinary stakes with the award-winning Rang Mahal. His vibrant, modern Indian cuisine has been pleasing diners in the city since it opened in 2012. Serving only dinner, a moody den of dark reds, rich gold and low lighting is the setting, enveloping diners in a warm, surprisingly nook-like atmosphere. Food emerges from the kitchen in a steady flow of beautifully presented, colourful plates. Start with tender chicken breasts with almonds and green cardamom and a trio of temptingly savoury potato cakes inspired from across India. For a main course, mixing traditional flavours with a contemporary flair, the signature Meen Moilley is not to be missed – the sea bass comes pan-seared and dressed in a coconut and tumeric curry with mustard potatoes and sesame asparagus and is as light and fragrant as can be. The Gosht Khada lamb masala is also a good pick, with crushed fennel and black cardamom. Finish with an elegant and utterly delicious rose, saffron and pistachio ice cream in faux Neapolitan-style. An authentic addition to the Dubai skyline. BG.
