Long, lazy summer lunches should always have a plentiful supply of wine, at least that’s how we like them, so setting yourself up in a vineyard makes perfect sense, especially one that serves up a local menu perfectly attuned to al fresco dining. But this isn’t Provence or Tuscany we’re talking about – this is Sussex, England, where Rathfinny Wine Estate now have their Summer Kitchen open. Looking out across the vineyard, while sipping a sparkling white or rosé, you’re served up the best of the seasons, from chicken smoked over vines with apricot and tart of summer squash with High Weald ricotta and sage pesto, to a simple finale of baked cheesecake with Sussex strawberries and elderflower.
