An American favourite that crossed the pond just over a year ago, USDA Prime- graded dry-aged steaks are the deal at this art deco-style steakhouse off the Strand. The beef, picked for its perfectly even fat marbling, is stored in an ageing room in the basement for 28 days before being butchered to order. It emerges simply presented, the meat taking centre stage, be it a 395g sirloin or a whopping 700g T-bone. Succulent, pink and full of flavour, these cuts are best accompanied by creamed spinach and baked potato with a dollop of house steak sauce for a true Yankee touch.
