The heart of the great American barbecue tradition lies in the Southern states, and this Spinningfields restaurant is a homage to the hickory-smoked dishes of Oklahoma and its neighbours. All the meat, however, comes from nearby Lancashire or just outside Manchester, including the four hour smoked ribs (with dry rub or barbecue sauce) and the pulled pork, which is cooked for a full 18 hours and comes with jalapeño cornbread. Up the indulgence factor further by topping your meat with a thick blue-cheese sauce and wash it all down with a cookie-crumble milkshake. AEM.
