When Food and Travel visited two years ago, chef Shay Cooper was just finding his feet. Today, he’s not only found them, but landed them firmly under the top table of UK restaurants. A Michelin star was his reward for the two years he spent tweaking his adventurous British menu. And some astoundingly good dishes have emerged as a result. Start with the roast veal sweetbreads, celeriac purée, poached grapes and candied walnuts. Follow that with squab pigeon, served with beetroot and hibiscus purée and plum tart. Finish with the incredible Amedei chocolate tart.
