Tom Kerridge’s name is above the door, but it’s one of his best chefs, Tom De Keyser, behind the stove at The Chalk after a decade at The Hand & Flowers. This Chelsea pub has Kerridge details such as chicken and duck liver parfait ‘churned to order’: sweet and meaty. Pork chop schnitzel and smoked bacon with a fried duck egg remind you Tom Kerridge effectively reinvented pork for the modern age, and his nod to the neighbourhood, Chelsea bun with cold custard, boozy fruits and praline, is a classic in the making.
