While the main event – perhaps super- savoury black truffle and potato agnolotti with Corra Linn cheese, Josper-flamed English wagyu or John Dory chop – let the flagship ingredients take centre stage. Nothing’s overdone – even the knickerbocker glory trolley manages to hone elegance thanks to the likes of fig ripple ice cream.
