With around 40 wines served by the glass and 24 available for tasting in the adjacent wine shop – it’s unsurprising that this modern British hotel restaurant is drowning in AA wine awards. To sample chef James Claydon’s best work, go for game; pancetta and sage-wrapped partridge is full of flavour and served with creamy celeriac mash, while the haunch of wild venison – paired with perfectly barrel-shaped fondant potatoes – is deliciously tender.
