Josh Eggleton might just have created the perfect country dining destination in The Pony Chew Valley. A pristine view of rolling English countryside south of Bristol, an enviably verdant kitchen garden, a community-driven agenda (including a ‘battle bus’ to spread the good culinary word) and so much talent in the kitchen you could order everything several times over and never get bored. Like a Pony Garden Salad so hearty it could make Desperate Dan set aside a cow pie; breads – and butters – of heaven (or, in this case, Wales); or the many simple combinations done brilliantly well, from duck breast and plum to great steaks made sublime with ox cheek. It’s all about things you love made better, with trimmings that are good enough to be a main event. The only challenge is what to order. Faultless.
