THE PERFECT MATCH

It’s common to pair wines with food, but creating dishes to pair with wine is less common – and it produces outstanding results from Tom Scade’s The Tasting Room at The Vineyard in Berkshire. Dining here is an education, with ‘lessons’ including pairings of heritage beetroot with a glass of Simpsons English pinot noir rosé; Cornish turbot with New Zealand pinot gris from Rockburn; and an elegant floral Venetian soave by Ca’Rugate to go with Dulcey blond chocolate with almond, jasmine and Amalfi lemons. The matches are what you’d expect from a hotel that has one of the country’s largest selection of wines, and whose owner, Sir Peter Michael, has extensive vines in California. Tom has been given the freedom to play with our senses, and with that comes responsibility to execute it well – which he does with aplomb.
