A good test of a Chinese restaurant is the quality of their xiao long bao (aka soup dumplings), especially for fans of dim sum. A holy trinity of crab, chicken and pork fill 3 Gorges’ version, each one crammed with the meat, defying the laws of physics to find space for plentiful broth too. It’s an encouraging sign, as is roasted duck mein – a complete taster made up of different ducky bits – but then this is the kind of Chinese where you want everything on the menu. Sweet and sour Ibérico pork is served on ice, giving you hot and cold, as well as it two standard flavour senses. Everything in this restaurant in London’s Fitzrovia – from soft-shell crab with crunchy almond to juicy, crispy prawn rolls and XO mangetout – has that balance of flavour and texture that keeps us going back for quality Chinese time and again.
