Saarburg is a charming riverside town in Germany’s Saar countryside, set within the wider Moselle Valley. On the banks of the Saar, and overlooked by the medieval ruins of Saarburg Castle, Villa Keller stands as a reminder of the town’s layered history.
Dating back to 1801 and now a listed building, the house has been carefully restored as a refined boutique hotel. At its culinary centre is Dopamin Fine Dining, where head chef Axel Boesen reinterprets the flavours of the Saar-Hunsrück region with Japanese and Nordic influences. His cooking is precise and direct, with an emphasis on contrast. ‘Taste always comes first,’ he says. ‘I don’t like overly rounded dishes. I prefer to work with spice and acidity – those moments where something unexpected happens.
For something more classic, Keller’s Wirtshaus serves updated versions of traditional, heart-warming German dishes in a cosy riverside setting.
