Gone are the days of soulless city hotels. At the boutique 124-key Ace Hotel Toronto, retro brutalist architecture gives way to soft ambient tones with a textural palette that draws on the locale’s Garment District past. Set amid a trendy neighbourhood that’s home to iconic music venues and near neon-lit Chinatown, by day the bustling lobby fills with creative types. And by night, the rooftop bar, Evangeline, becomes an epicurean retreat, decorated with vintage rugs, sultry velvet and polished low tables. But it’s the restaurant, Alder, that is the hotel’s ace of spades, with a wood-fired grill at its heart and a Mediterranean spirit. Michelinlisted chef Patrick Kriss helms the operation, serving signatures of prime meats, fresh seafood and seasonal vegetables cooked over an open flame. A contemporary venue with an industrial aesthetic and a nostalgic tribute to the region’s history.
