Head into the wild at Elva Hotell in the great outdoors of Voss. The scenic train ride from Bergen takes just over an hour, delivering you straight into this otherworldly landscape. On arrival, a room with a view awaits: the main house and five cabins, each named after a local river, are positioned at the edge of Lunda Lake. Vistas sweep across the water towards snow-capped, forested mountains. Thrill seekers will love the action-filled slopes – there are two ski resorts close by – while those who prefer relaxation will find refuge at the wood-fired sauna and outdoor hot tubs. Comeevening, all paths lead to the restaurant, where Voss and the Westland region are showcased with dishes such as deer tenderloin with confit carrots, cod in saffron sauce, and wild mushrooms with roasted onion and herb oil - book ahead for a seven-course tasting menu on Saturdays. Design-led, deeply rooted in nature, and serious about its food, no wonder it earned a Michelin Key earlier this year.
