Burrowed into the South Tyne valley in Northumberland is the hamlet of Slaggyford – home to the historic Kirkstyle Inn. A boutique standalone amid wild moorland, it offers a superlative menu with sustainable, seasonal local produce at its core, courtesy of chef Connor Wilson.

The region’s impressive larder provides wild game, pasture bred lamb and beef from neighbouring farms, and fish straight from the Northumberland coast. The focus is on minimum intervention and maximum flavour.

À la carte diners can begin with a tempting trio of snacks, followed by starters including scallop or veal sweetbread. Knarsdale partridge, roasted venison haunch and North Sea halibut are among the hearty, beautifully presented mains, and a divine blue cheese, pear and apple tarte tatin is the perfect finish. Sunday lunch and tasting menus are also available, with a good selection of wines and local ales.

The four rooms – with king-sized beds and decorated in rich, natural tones – are a welcome refuge after time spent hiking in the rolling hills of the surrounding countryside or fishing the upper reaches of the river. And, before you turn in, end the night with a pint by the roaring fire in the bar.
