Once part of the Royal Charterhouse Palace, Mallorca’s new Hotel Valldemossa is a boutique affair of just 12 adult-only rooms. The sixth property for It Mallorca, it’s tucked away in the verdant Serra de Tramuntana mountains. The group’s known for its attention to interiors and each of the earthy rooms features a private terrace, with spaces honing Fifties French styling with pieces by Le Corbusier, Charlotte beams. There’s a spa, pool, rolling grounds and fusion-style restaurant De Tokio a Lima’s second outpost.
