The recently opened Pig at Halyn Bay is the seventh in the franchise from Robin Hutson and wife Judy – the brains behind their well-groomed design. Dating back to the 1600s, this historic Grade-II listed property, with its far-reaching coastal views and 5ha of gardens and wheat fields, is just a 10-minute drive from Padstow, right on the north Cornish coast. Renowned for its culinary ethos, it makes perfect sense that this slice of the Duchy was chosen for this quality breed.

Here, chef Adam Bristow’s excellent ‘25-mile menus’ are bolstered by a roll call of gardeners, foragers and farmers and served across the panelled dining room; the modern, light-filled Scullery; and alfresco Lobster Shed. Brooding nooks and snugs make for a chilled-out vibe –but the design is a little bolder than previous incarnations and sidesteps uniformity for quirks and character – including four shepherd’s huts, beside the kitchen garden.
