For a more intimate experience, Scholé, a ten-seat spot in Hobart, delivers Japanese-inspired dishes using the island’s finest produce. Paddock-to-plate here isn’t a buzzword; it’s a way of life, from foraged truffles to oysters plucked straight from the water.

Beyond the table, Tasmania’s diversity of experiences is remarkable. Cruise the untouched south-west wilderness, hike mountain trails or cast for trout in alpine tarns, then unwind with a cool-climate pinot noir overlooking Hobart at sunset.
