Ingredients

  • 600g glutinous rice
  • ¼tsp sugar
  • 100g raw unsalted peanuts

For the peanut and sesame dry paste

  • 4tbsp roasted unsalted peanuts
  • 3tbsp toasted sesame seeds
  • pinch of sugar

Method

Soak the rice overnight in cold water. Drain the rice and rinse under cold running water until the water runs clear. Sprinkle the rice with the sugar and 1tsp salt and stir through the peanuts. Put the rice in a steamer lined with a muslin cloth and steam for 30 minutes. Remove the lid from the steamer and check that the rice is cooked. It should be tender all the way through. For the peanut and sesame dry paste, grind the peanuts and sesame seeds in a mortar and pestle. Stir through the sugar and ½tsp salt. Eat the sticky rice by making small balls of rice with your fingertips and dipping them into the dry paste. If you are not going to serve it straight away, cover the rice with a damp cloth to prevent it from drying out.
